BBQ GRILLED CHICKEN BREAST

Tender chicken breasts smothered in a thick, homemade BBQ sauce. If you’d prefer, feel free to use ready-made BBQ sauce but this recipe is so simple, can be made ahead of time and lasts in the refrigerator! Use the BBQ sauce as both a marinade, to baste and as a dip, constantly adding flavour.

Ingredients

BBQ Sauce:
1 cup tomato ketchup
1⁄2 cup apple cider vinegar
1⁄4 cup brown sugar
1 tbsp dijon mustard / mustard powder
1 tbsp smoked paprika
1 tsp onion powder
1 tsp garlic powder
1 tsp chilli powder

BBQ Chicken:
2 cups BBQ sauce
4 chicken breast, skinless and boneless

Instructions

  1. Into a small saucepan add all of the ingredients for the BBQ sauce, stir to combine then place on a medium heat and simmer for 5 minutes. Remove from the heat and transfer to a bowl to cool.

  2. Place the chicken into a large mixing bowl then pour over 1 cup of BBQ sauce, mix well and place in the refrigerator. Marinade for at least 1 hour or overnight.

  3. After marinating, preheat a small gas grill to medium heat.

  4. Once hot, place the chicken onto the grill and cook for 7 minutes on each side. Brush the chicken with additional BBQ sauce as it cooks.

  5. Transfer the grilled chicken to a serving plate and allow the chicken to rest for 5 minutes.

  6. Serve the grilled chicken hot with extra BBQ sauce, coleslaw or potato wedges.

THAI GRILLED CHICKEN BREAST

Thai Grilled Chicken Breast

Ingredients

2 lime, juice and zest
3 tbsp fish sauce
3 tbsp brown sugar / palm sugar
1 tbsp soy sauce
1 tbsp rice wine vinegar
1 tbsp sesame oil
3 clove garlic, finely chopped
1 red chilli, finely chopped
1 inch ginger, finely grated
4 chicken breast, skinless and boneless

Instructions

  1. Into a mixing bowl add all of the thai marinade ingredients and stir to combine. Then add the chicken breasts to the bowl and cover, refrigerate for at least 1 hour, up to overnight.

  2. Once marinated, remove the chicken breast from the bowl and discard the marinade.

  3. Preheat a small gas grill to medium heat.

  4. Once hot, place the chicken onto the grill and cook for 7 minutes on each side.

  5. Transfer the grilled chicken to a serving plate and allow the chicken to rest for 5 minutes.

  6. Serve the Thai grilled chicken breast hot, alongside a coriander dressing, fresh salad or crunchy pickles.
